Fresh fruit and veg are in abundance right now, making it the perfect time to try something new — like round courgettes.
These fabulous fruits (they are fruit actually!) are a compact version of the familiar courgette. They have a similar flavour and texture, and can be substituted in any recipe.
There are a some ways to cook round courgettes that are absolutely delicious.
Grilled
- Slice horizontally, to a thickness of about 1.5 cm
- Brush with olive oil
- Sprinkle with sea salt
- Grill until slightly blackened
- Enjoy!
Another simple, delicious way to enjoy round courgettes is to stuff them, and there are a couple of options.
Cold
- Slice off the top
- Scoop out the centre
- Fill with a chilled summer soup like watermelon gazpacho
- Serve with a green salad
Baked
- Slice off the top
- Scoop out the centre
- Fill with a combination of diced veg (tomato, onion, etc), beans (white, chickpeas), and shredded cheese or chopped nuts, if desired
- Brush the exterior lightly with olive oil
- Place in a roasting pan and bake for 10-15 minutes on high heat, until the courgette is tender and the filling hot
- Serve with a salad or fresh bread
