Chilled soups are the perfect clean eating solution to hot summer days. Whip them up for a refreshing lunch or light dinner, and pop the leftovers in a thermos for a hydrating post-yoga snack.

The nice thing is that for a lot of these recipes, all you have to do is whiz up the ingredients in a blender or Bullet and you’re done. No pots and pans, no cooking, no fuss.

Cold Mango & Ginger Soup

  • 1 large mango (peeled and pitted)
  • 1/2 onion (chopped)
  • 120ml cold water
  • 1-2 small chilli peppers (minced)
  • Juice from 1 lime
  • 1/2 tsp. ginger (grated or minced)

Chilled Tomato & Basil Soup

  • 1kg tomatoes
  • 1 bunch fresh basil, chopped
  • 480 ml vegetable broth
  • 2 cloves garlic
  • 2 tbsp balsamic vinegar
  • salt and pepper to taste

Red Pepper Gazpacho

  • 5 medium ripe tomatoes, chopped (use the best quality and freshest you can find)
  • 1/2 cucumber, chopped
  • 1 red pepper (yellow or orange will also work if needed)
  • 2 cloves garlic
  • 60ml water
  • Dash cayenne pepper, or to taste (optional)
  • 2-3 tbsp. fresh parsley or cilantro, chopped
  • 1 avocado, diced (optional)

Raw Vegan Avocado Soup

  • 3 large avocados, chopped
  • 2 large cucumbers, chopped
  • 2 large tomatoes
  • 1/2 cup chopped fresh cilantro
  • 1/2 medium red onion, chopped
  • 2 cloves garlic, minced
  • 1 small red or green chili OR 1/2 tsp hot sauce, to taste (if you’re not eating raw)
  • Approximately 1/3-1/2 cup water OR vegetable broth (if you’re not eating raw)
  • Juice from two large limes (about 3 tbsp)
  • 1 tbsp cold-pressed olive oil
  • 1/2 tsp kosher or sea salt, to taste
  • Dash of fresh ground black pepper (optional)
