Fresh, seasonal veg is in short supply in January but luckily there is one veggie powerhouse going strong: kale.
This versatile leafy green is packed with nutrients including vitamins K, A and C; and minerals like manganese, iron and copper. I find it a bit tough raw, though you can marinate it using a lemon-juice or vinegar dressing to soften it up for salads, but it is delicious steamed, stir-fried, in soup or as kale crisps.
