Kiwis is a fantastic sources of vitamin C and is loaded with beta-carotene, which is essential for Vitamin-A production in the body. It contains lots of fibre, as well as valuable electrolytes like potassium, and trace minerals and nutrients that act as powerful healers for the body on all levels. Not to mention that it is portable and incredible delicious on its own, in salads, smoothies or juices! I particularly like this recipe for kiwi-apple-celery and ginger juice from Vegetarian Times. Yum!

1 large celery stalk
1½ large Granny Smith apples, cored
1 kiwifruit, peeled and halved
⅓ cup loosely packed parsley leaves
1 Tbs. minced fresh ginger
2 tsp. lime juice

Place celery, apples, kiwifruit, parsley, and ginger into juice extractor; process into smooth juice. Stir in lime juice; serve.
